Super Bowl XLV Snacks Part I: Queso Dip

The Super Bowl is coming! For many of you, this day will be filled with plays, stats and all other sorts of football jargon. I, on the other hand, know the bare minimum about football. So instead of worrying about the Steelers or the Stinky Cheeseheads, I am happily waiting for Sunday, Feb 6. because of the enormous appetite Americans have for Super Bowl snacks! Over the course of this week I will be posting three of my favorite ridiculously unhealthy snacks for you to bring to your Super Bowl party.

To kick off, I’m making a gooey and sinful queso dip. It is great served with tortilla chips, sliced baguette or raw veggies.

First, gather your ingredients:

1 TBS oil

¼ C onion (any kind), finely diced

1 jalapeno pepper, all seeds removed and finely diced

10 oz white American cheese (from the deli counter) shredded or finely chopped

4 oz pepper jack cheese, shredded or finely chopped

2/3 C milk

2-3 dashes Tabasco sauce (if you want to turn the heat up a bit)

Next, follow these directions:

  1. Heat the oil in a medium-sized saucepan over medium heat.
  2. Drop the onion and jalapeno into the hot oil. Stir around and cook for about 6 minutes, or until the vegetables are soft.
  3. Turn heat down to medium-low. Add all the cheese, milk and Tabasco sauce (if using). Stir the mixture constantly until all the cheese is melted and you have a smooth, creamy consistency.
  4. Pour the queso dip into a serving bowl and surround with chips, bread, veggies or anything else you want to dip into it.
  5. If you’re feeling fancy add some chopped onion, tomato, jalapeno, scallions or cilantro to the top of the dip for a garnish.
  6. Make sure you have a seat on the couch close to the queso dip. Enjoy!
