Super Bowl XLV Snacks Part II: Jalapeno Poppers

The Super Bowl is approaching quickly, which means it is time for the second yummy treat to serve at your party on Sunday. Jalapeno poppers are a quick and easy crowd pleaser. This recipe will make about 50 poppers. Happy Popping!

Ingredients:

10 slices bacon

2 pints jalapeno peppers

8 oz cream cheese

1 cup pepper jack cheese, shredded

Directions:

1. Preheat oven to 400. Lay bacon slices onto a baking tray and cook for about 15 minutes, or until crispy. When the bacon is done, remove from the oven and transfer bacon to paper towels to absorb some excess grease. Reduce oven temperature to 375.

2. While the bacon is in the oven, mix together the cream cheese and the pepper jack cheese in a bowl, set aside.

3. To prepare the jalapenos, you may want to wear plastic gloves. If you don’t have gloves, be sure to NOT touch your face or eyes until after you have thoroughly washed your hands. Slice the stem ends off the peppers and then slice them in half lengthwise. Using a spoon, scoop out all the seeds and discard. If you want to set your friends’ mouths on fire, leave some in.

4. Using a spoon, stuff each jalapeno half with the cheese mixture and place the pepper on a foil-lined baking sheet.

5. Either crush the bacon with your hands or chop it into small pieces. Sprinkle a good amount of bacon on top of each cheese-stuffed jalapeno.

6. Bake the jalapeno poppers in the 375 degree oven for about 20 minutes. You want the peppers to be roasted and the cheese to be a light golden color. Serve the poppers while they are hot!

If you would like to prepare these ahead of time, follow steps 1-5 and cover the baking sheet with plastic wrap or foil. When you are ready to serve the jalapenos, continue with step 6.
