Cooking on the Quad: Just Desserts

On this very special episode of Cooking on the Quad, Joel and Annie celebrate their last episode together. Sadly, the wonderful Annie Rath is graduating on to bigger and better things, so she and Joel decided to say goodbye with one final course—dessert! Joel makes a batch of his famous “Kick-Ass” Brownies, while Annie concocts a blueberry and peach crumble.

Joel’s Kick-Ass Brownies

Preheat oven to 350 degrees.

In a saucepan, melt 2 sticks butter or margarine with 4 squares (4 oz) unsweetened baking chocolate. 

Remove from heat and slowly stir in 2 C sugar.

Add 3 eggs, one at a time, beating after each addition.

Stir in 1 tsp vanilla.

Stir in 1 C flour and 1 C walnuts.

Pour into a greased 13 X 9 pan.

Top with 1/2 C walnuts and 6 squares (6 oz) chopped semisweet chocolate.

Bake for 35-45 minutes.

Annie’s Blueberry/Peach Crumble

Filling:
2 lbs fruit—I used half peaches and half blueberries. If using fresh peaches, peel and slice them. If using frozen fruit, thaw before using.
2 tsp grated lemon zest
2 Tbs fresh lemon juice (you will need 1 lemon for the zest and juice)
1/2 C sugar
1/4 C flour
Topping:
1 C flour
1/4 C sugar
1/3 C packed brown sugar
1/2 tsp salt
1/4 tsp cinnamon
1/2 C (1 stick) butter, broken up into pieces
Preheat oven to 350.
Combine the fruit in a bowl with the lemon zest, lemon juice, flour and sugar. Stir and let sit for a few minutes while you prepare the topping.
In a separate bowl, combine the flour, both sugars, salt and cinnamon and mix together. Add the butter and work with your fingers or two forks to incorporate the butter into the dry mixture. Stop when the mixture looks like wet sand.
Pour your fruit mixture into a baking dish (I used a 9″ pie pan), and then distribute the flour/butter mixture evenly on top of the fruit. Bake in the preheated oven for about 40-45 minutes, or until the fruit is tender when pierced with a fork and the topping is golden brown and crumbly.
