Recipe of the Week: Frozen Jell-O Pops

In preparation for summer, which seems to be on the way (no matter how bipolar the weather in Boston is), Popsicles are a great option for a summer snack: they’re tasty, not completely unhealthy, and almost anything can be added to them! Although I did not do so in this recipe, the addition of fruit pieces such as kiwis and strawberries make the Popsicles healthier and are a great choice for an after-workout snack.

The flavors and mixtures of Popsicles can also be varied by adding actual fruit juice (as opposed to just Jell-O and sugar). One of the best successes I’ve experienced with that was the addition of orange or apple juice because of how sweet the juice is.

So get ready for warmer weather by making delicious snacks. The whole process is dorm-proof, so anyone on campus with a microwave and refrigerator can make them. I can also tell you, from personal experience, that they often last for a while without unfreezing. If you package them carefully enough, taking them out to the BU Beach is definitely an option.

Please experiment with all the flavors you have at your disposal and don’t hesitate to try weird and interesting tastes, because you might end up finding something you love!

Frozen Jell-O Pops

Total time: 6-7 hours

Ingredients:

2 cups hot or boiling water

1 package of Jell-O Brand gelatin (flavor of your choice!)

½ cup sugar

2 cups of cold water

Directions:

1. Mix Jell-O Powder Mix and sugar

2. Stir the boiling water into the Jell-O and sugar until the powders are completely dissolved

3. Stir in the cold water

4. Pour into cups or Popsicle molds

5. Freeze for about 2 hours (until almost firm)

6. Stick in a wooden spoon, stick, or plastic spoon for a handle

7. Freeze for 5 or 6 hours

8. Press firmly on the bottom of the mold or run a knife around the edges to release the pop
